Peanut Butter Banana Taco: Rich With Life - Gluten, Dairy, and Sugar Free

That is how every recipe should start, right? Wouldn’t that be nice! This is a great dessert (or snack) that I used to make often in college. It was one of those where I made it, fell in love with it, made it way too many times in a row for months, and then never craved it anymore. Lucky for me (and for you!) my cravings are back in full swing and I am loving this dessert right now. I think I have eaten it 5 out of the last 6 or 7 days.

It’s the perfect combination of warm gooey-goodness, with a soft crunch (is that even a thing?) and the corn makes it even a little salty. Plus, there is banana, and who doesn’t love banana?! If you’ve spent any time on my blog, you can see that I’m a little obsessed.

On that note actually, I just recently made a new friend. Oh yeah, by the way, I moved to Texas. It’s been a while since I posted and I had this whole plan to blog every week, etc, etc, and then life happened. Anyway, I am in grad school and it’s insanely busy, but I promised myself I would write this recipe post this week. So, back to what i was saying — New friend! Ah! She is the coolest! She can’t eat many of the same foods as me! Sadly though, one intolerance she has that we do not share is bananas. … I know! So tough. So I am going to be trying to brainstorm some new ideas for how to make these recipes and new ones without bananas. But I definitely think you could put other things in this like pineapple, apples (cooked or raw!), pears, strawberries — go crazy, get creative!!

Zucchini Brownies/ Tort – No added sugar!

I (still) don’t know what to call this…

When searching for a chocolate recipe, I had a lot of trouble finding one without any added sugars (including natural sugars), as I often do when searching for desserts. I have adapted this from several recipes I found to be completely free of added sugar and it tastes awesome! To make it a bit sweeter, I added bananas and created a tort of sorts… errr a sort of tort?

GF, DF, SF, Vegan

Ingredients:

  • 1/2 C peanut butter (I use mara-natha)
  • 1/2 C. applesauce
  • 1 large banana (mashed)
  • 1 1/2 C zucchini (peeled, chopped in food processor)
  • 3/4 C gluten free oats (ground in food processor)
  • 1/2 C unsweetened cocoa powder
  • 2 tsp vanilla
  • 1 tsp baking soda
  • 1/4 tsp salt
  • Optional: If you like things a bit sweeter, add in 2 Tbslp of honey or maple syrup
  • Optional toppings: Top with peanut butter and extra banana

2-ingredient Healthy “Ice Cream”

Ingredients:

  • 4 super ripe bananas – frozen
    cut up and freeze in plastic bag, tupperware, or cookie sheet.
  • 2 Tblsp peanut butter

Optional toppings: frozen (or fresh) bananas, blueberries, or peaches, cacao nibs, unsweetened coconut flakes

Banana Pancakes, babycakes!

This song describes my boyfriend so well. He IS Jack Johnson (Well… maybe just a little less famous). He is all about forgetting the world, jammin’ to some music, and living in the present. That’s why he’s part of my medicine.

So last week, Gabe was craving something sweet. Since such a thing does not exist in my house (at least not with sugar) he said, “Babe! We could make those pancakes tonight!” And so we did. At 10 pm, we made banana & egg pancakes. Cuz we’re awesome.

Fall Breakfast Cookies

GF, DF, SF, Vegan (if no eggs)
Ohhh cookies! How I miss thee! These cookies are how I got through my sugar-withdrawals for the first month. You’re able to perform the action of biting into a real cookie, with real taste. If focusing on sugar-free, just make sure to get dried fruit without any added sugar. The SMELL these cookies make while they are in the oven… well, you’ll just have to make some yourself!

Ingredients: 

Wet ingredients:

  • 1 large ripe banana
  • 3/4 cup unsweetened applesauce or 3 eggs
  • 1/4 cup melted coconut oil
  • 1 tsp. vanilla extract (I always add a little extra)

Dry Ingredients:

  • 1 cup dried fruit (apricots, dates, raisins, etc.) no added sugar
  • 1 1/2 cup gluten free oats
  • 1/2 cup nuts (I use peanuts)
  • 1 tsp cinnamon
  • 1/2 tsp salt
