These make my taste buds sing every morning.
I feel like I’m on vacation, when I make these babies, sit on my patio, and listen to the world wake up. I coined these “hotel breakfast potatoes” because sometimes when I stay in a nice hotel on the road, or if I have an early flight out the next day, we order room service or to-go from the restaurant. I call down and find out how they make their breakfast potatoes and eggs, and usually they’re fine, but if they are fried or something, they will many times accommodate me and just make my own in a pan on the stove. I love friendly hotels (SPG hotels have a pretty good reputation for cooking safe food in my book).
Okay Emily so what – get to the point. OKAY so these are always the best potatoes! These ones and the ones at Root Down in the Denver airport. Wow, those are so good too. My very very favorite ones are when they have all different colors (yes, you can taste subtle differences, I swear) like purple, blue, red, and then of course the traditional white/tan. Even better is when they add in sweet potatoes. Okay well enough dreaming about hotels – these are the real deal and they taste like the ones in the hotels! I LOVE potatoes so much guys and they just make me so happy the whole time I’m eating, so they usually get eaten last and it’s my favorite part!

A quick and easy dessert, with ingredients you already have on hand!
That is how every recipe should start, right? Wouldn’t that be nice! This is a great dessert (or snack) that I used to make often in college. It was one of those where I made it, fell in love with it, made it way too many times in a row for months, and then never craved it anymore. Lucky for me (and for you!) my cravings are back in full swing and I am loving this dessert right now. I think I have eaten it 5 out of the last 6 or 7 days.
It’s the perfect combination of warm gooey-goodness, with a soft crunch (is that even a thing?) and the corn makes it even a little salty. Plus, there is banana, and who doesn’t love banana?! If you’ve spent any time on my blog, you can see that I’m a little obsessed.
On that note actually, I just recently made a new friend. Oh yeah, by the way, I moved to Texas. It’s been a while since I posted and I had this whole plan to blog every week, etc, etc, and then life happened. Anyway, I am in grad school and it’s insanely busy, but I promised myself I would write this recipe post this week. So, back to what i was saying — New friend! Ah! She is the coolest! She can’t eat many of the same foods as me! Sadly though, one intolerance she has that we do not share is bananas. … I know! So tough. So I am going to be trying to brainstorm some new ideas for how to make these recipes and new ones without bananas. But I definitely think you could put other things in this like pineapple, apples (cooked or raw!), pears, strawberries — go crazy, get creative!!

The Island of Kauai: a gluten and dairy free diner’s dream.
This hippy fantasy is perhaps the easiest island out there for those requiring a special diet. Visiting Kauai makes every other vacation seem like a nightmare. The tropical fruits are an obvious must, coupled with local veggies, acai bowls (hold the granola), and smoothies galore. You barely even need to think about food on this beautiful tropical island!
I was especially fortunate when we stayed in Kauai because we stayed in a vacation rental with a full kitchen. I cooked several meals (especially breakfast and snacks) which always makes the trip less stressful and my stomach happier), but Kauai is easy enough even without this luxury. I had the opportunity to splurge on a few restaurants during my stay!

Day-to-Day Life after Surgery
So what happens after surgery?
Well, the day of surgery most people sleep the majority of the day. As you probably read in my Surgery part 2 post, I was awake most of the day 🙂 It’s helpful to have people in the morning and the evening when you’re getting dressed and bathing. Here are some subject-specific ideas that will hopefully give you an idea of what to expect!
The Perfect Summer Tacos
Yum! This recipe was made on-a-whim when Gabe and I wanted to make a quick and easy dinner on the grill. I stopped by pinterest for a few minutes and quickly decided to do some chicken tacos when I stumbled upon this awesome watermelon cucumber salsa. We are a little obsessed… It was love at first bite!
What I love so much about this recipe is that it’s just perfect for a summer BBQ! The watermelon is wonderfully cool and refreshing, while mixing so well with the salty corn tortilla! The cucumber and watermelon just give it a great crunch as you bite into the taco. And the cilantro! Ahhh it’s just so tasty!

- 1 – 1 1/2 pounds grilled chicken breasts
- Olive oil (about 8 Tblsp)
- 1 1/2 cups finely chopped watermelon
- 1 small cucumber, peeled and chopped
- 2 Limes, juiced
- 1 green chili, finely chopped

What to expect the day of surgery.
At the hospital, surgery happens every day, multiple times a day. For the patient, it happens once in a blue moon (for most people). Bottom line: Surgery is a big deal!
I make this point because it’s important for patients to not be afraid to speak up! If you are cold, ask for a blanket… or five blankets! If something doesn’t feel right, or you need an explanation, speak up and ask. The nurses, techs, and surgeons do this every day and it can be easy for them to forget how foreign and frightening the whole experience often feels for patients. It’s important to feel comfortable and in control.
The hospital will have you arrive at least an hour before surgery. Soon thereafter they will have you change into a gown, take your vitals, and begin an IV. Before you know it, you’re fading out. Although I was apparently awake and talking to my surgeon and anesthesiologist, I completely forgot all of it when I woke up.

Last October I had shoulder surgery. Throughout the process, I knew I wanted to share what I learned on the blog because I wished I had known more going into it. I searched for information online and didn’t find a whole lot, so I hope this post will help serve as an informational guide before you have your procedure. The “how-to” of shoulder surgery that the doctors don’t give.
*Before I begin, I need to note that my surgery was a very different procedure than most shoulder surgeries. I had surgery to tighten the joint, because I was having consistent subluxations (partial dislocations) and the joint was completely unstable. After suffering for nearly six years with many restless nights, I finally decided there were no other options. The goal of this surgery was to actually limit my range of motion, and tighten the whole joint. Therefore my recovery time was much slower than a rotator cuff tear, for example. For most shoulder surgeries, the surgeon and therapists want you to be moving it within a week or two. My arm stayed in the sling for over a month. Keep this in mind when reading dates and timeline, as yours may very well be faster.
Getting Dressed: A very basic ADL!
One of my biggest concerns in preparing for surgery was, how am I going to dress myself every day on my own? My mom and boyfriend are at work early, so am I just going to stay in my PJs all day? Not the healthiest thing for your mental state. You don’t realize how important this ADL (activity of daily life) is until you first hand are unable to do it! I talked to my friend who is an OT and her recommendation was to cut up some large shirts I didn’t care about and also just buy some bigger, stretchier shirts that I would be able to get over everything.
Gluten Free in DC

I recently took a vacation to Washington D.C. with family. We were lucky enough to stay in a timeshare (Wyndham) outside the city (National Harbor), which meant I had a kitchen to cook in! This was fantastic and allowed me to cook breakfasts every day and a couple lunch and dinners. On Saturday however, we went in to the city and are lunch and dinner out. Check out the great restaurants I found!
Penn Quarter – downtown DC
I love love love Jaleo so much. I dined for the first time at this restaurant in Las Vegas for my 21st birthday and couldn’t wait to check out their DC location on my recent trip! Jaleo can only be found in 4 locations, with 3 of them being near DC (Penn Quarter, Crystal City, & Bethesda) and the last location in Vegas. The location we visited was the original, and it’s right downtown within walking distance to all the museums, capitol building, and the mall. It’s also not far from Chinatown, so if you’re in for the day, check out Shop House on 7th st. It is definitely a unique menu with tapas for sharing, suggesting 2-3 dishes per person. Not a cheap menu, but you will pay for the quality flavors and the experience.
