Quinoa Meatballs Gluten, Dairy, Sugar Free

GF, DF, SF

Ingredients:

  • 1 lb ground beef (85% lean or more)
  • 1/2 C quinoa
  • 1 C water (for quinoa)
  • 1 jar tomato sauce + 1 jar water
  • 3 cloves garlic
  • 1 egg
  • 1 onion, diced
  • 1 Tblsp Salt
  • 1/4 tsp oregano
  • 1/4 tsp basil
  • 1/8 tsp pepper

Mason Jars.

I love smoothies. I love mason jars. And I love the sun. Together, these made my weekend something special. I’m busily finishing my semester and heading toward graduation in a month and then moving to begin grad school. It’s very easy for me to get caught up in it all and begin feeling sad or stressed. But every day is a new day, and we are given that chance to have a fresh start. If you find yourself stressed or upset, try taking a day for yourself, to relax and reset. Possibility: Day 40 #100PositiveDays

IMG_8729 This post is so appropriate, as I have just made a big decision in my life moving forward. I am excited about the possibilities, frightened of the risks, but confident that it will help me in my pursuit to help others reach their full potential. The opportunities I will be given in the future are worth the fears in the present.

It is said, with a shaking voice, onward we march, even on those paths which seem intimidating, so that we may search out the possibilities, without regret or wonders of what may have been.
